On June 4, 2010, the Research Center of the Bocuse Institute is organizing its third Symposium, in Ecully. The purpose of the event, which brings together researchers, professionals and industry operators from all over the world every year, is to share the scientific community's latest knowledge and professionals' skills and expertise on the same issue. This year the Symposium will be addressing issues involving the place of cereals in today's diet and the relations with enjoyment, health and the economy. The event will also be an opportunity to learn about the results of the studies conducted by young researchers and doctorands of the Paul Bocuse Institute.
There will be different speakers at the Symposium, including Chantal Simon, Professor at Lyon 1 Claude Bernard University and member of the Executive Committee of the Center for Research on Human Nutrition (CRNH, Centre de Recherche en Nutrition Humaine). She will be assessing the relations between eating behaviors, physical activity and the environment. Inger Bjorck, Lund University, Sweden, will be talking about how the physiological and cognitive memory is involved in eating behaviors.
